Paesanella Burrata is an artisan fresh style Italian handmade cheese, made from cow's milk mozzarella and cream that exhibits a rich, buttery flavour, and retains its fresh milkiness. The outer shell is solid mozzarella while the inside contains a blend of both mozzarella and cream, giving it a unique soft texture and the cheese is floated in water for added freshness.

The name "burrata" means "buttered" in Italian and although there is no butter added to the product it is the buttery attributes and flavour that give the product its name. When the Burrata is sliced open its ritagli-thickened cream flows out.

It is usually served fresh and at room temperature and best when eaten within 7 days of manufacture. Once opened the cheese must be eaten immediately. The flavour and different textures of the inside and outside make it go well with salad, prosciutto, hard and crusty bread, fresh tomato with olive oil and cracked black pepper, or pasta.
