Select bunches are left to ripen on the vine and harvested late in the season when sugar levels exceeded 18OBe and flavour has matured. This wine was made from vintages spanning 30 years off of 100 year old vines. The finished wine is fortified with spirit and matured in 30 to 40 year old French Cognac and American Brandy and Bourbon barrels. The barrels from each vintage became part of a solero system, where each new year tops the previous years' barrel. Younger wines add freshness and fruit character, while older wines offer complexity and developed flavours. This wine averages 7 years old.
