Tasting Notes: The aromas ethereal complexity immediately appeals; aromas emerge of roasted capsicum, cherry, vanilla, sweet earth, violets, black olive and sage. The palate shows well integrated oak, sweet fruit and fine ripe tannins. The length and balance of the body are excellent, finishing with a vibrant jubey lift.
Winemaking Notes: The fruit for this wine is comes from our 1976 'A—Block' Cabernet Sauvignon. It is no coincidence that our oldest block gives us our best Cabernet fruit as the site was chosen because of its superior combination of gravely loam duplex soils and north-east facing aspect. The old vines are remarkable, consistent in their ability to ripen tannins and provide a balanced spectrum of flavours season to season. The fruit is hand picked, then de-stemmed to 4 tonne open vessels for fermentation. Twice daily pump overs during fermentation followed by 10 days skin contact time ensures a wine that contains sufficient tannins for long term ageing. This is followed by 18 months maturation in French oak barriques (40% New) prior to bottling in February, 2009.
